Product DetailsDescriptionTriana Pedro Ximénez Viejo from Bodegas Hidalgo-La Gitana is a luxurious and deeply sweet sherry. With a rich mahogany colour and hints of iodine, it opens with opulent aromas of sun-dried raisins, figs, prunes, toffee and caramel. On the palate it is incredibly concentrated, velvety and thick, delivering luscious notes of dark chocolate, roasted coffee, molasses and candied orange peel, with a long, decadent finish.History & WinemakingBodegas Hidalgo-La Gitana, founded in 1792 in Sanlúcar de Barrameda in the Jerez region of Andalusia, is still family-run. The PX grapes are left to dry under the Spanish sun on straw or mats, concentrating sugars and developing intense flavours. After partial fermentation the wine is fortified, then aged in American oak casks under the criaderas and solera system for several years, yielding one of the finest expressions of Pedro Ximénez in the Sherry region.
