“Piper nigrum” White pepper is the seed of the pepper plant. This is usually accomplished by soaking fully ripe berries in water for about a week, during which the flesh of the fruit softens and decomposes. Rubbing then removes what remains, and the naked seed is dried. White Pepper has a rich, at times wine-like hot flavor that pairs well with strong meats and stews.
